This vegetarian recipe was a must-try, and I was thrilled with how it turned out. It was more of a technique using simple ingredients, and I will definitely make it again. I got this recipe from Sip and Feast.

Since my husband immediately went for seconds, I know it’s a winner. The man eats like a bird and a cow. Meaning eats little but eats all the time, lol. It was easy to make: just start pasta, saute onions, and then add cherry tomatoes and cook down till jammy. Then add the pasta and toss. The sauce becomes emulsified and creamy the more you toss (don’t forget to save some pasta water). It was delicious. I highly recommend that you try it. Here is the link.
